How To Paraphrase?
UNDERSTAND THE SENTENCE
Use synonyms eg He was famous--> He was well known
Change the structure eg I love going shopping--> Shopping is my favorite activity
Break the information into more sentences eg Swimming is the perfect sport to both have a great time and to stay fit. --> Swimming is a very fun sport to play because [...]. Also it helps you stay healthy.

Why is paraphrasing important
When you are given a writing task you shouldn't repeat it in your writing exactly as it is.
eg Many people believe that technology shouldn't be used in schools. Write an article stating your opinion. ---> Student's writing: Many people believe that technology shouldn't be used in schools....
Also when given a letter/email to answer or another text to use information from you should be careful not to use the exact same language
