You would never write the sentence tent is the stuffy, which gives you a clue that stuffy can only be an adjective.

There is an understood article. The sentence might also be written:
Joe is the captain.

Noun

To separate P4 from P5, and P6 from P7, you must understand the difference between nouns and adjectives.

For example:
I like autumn.
I like autumn weather.

In the first example,
autumn is the DO.
In the second,
autumn is the Adj (weather is the DO).

The "noun as adjective" always comes first. Autumn modifies weather.

Sometimes we use a noun to describe another noun. In that case, the first noun "acts as" an adjective.
