Handling Knives & Care
Knives are an essential kitchen tool but are dangerous! They MUST be treated

with respect, care and caution.

Guidelines for using knives:

If you drop a knife, let it fall- never try to catch a falling

knife!!!

Always carry a knife at you side with the tip pointing downward

Always use a cutting board

Never cut food in the palm of your hand

Do not gesture or point a knife at anyone or anything.

Cut away from your body.

Do not use knives for purposes other than cutting (as a

bottle opener etc)

Place your knife on top of your cutting board if

you must leave your station.

Never place a knife in a sink full of water.

Keep knives sharp. Dull knives are dangerous

and should not be used.

Use the Claw and Handshake while cutting (if you

don’t know what I mean, then ask!)

Never run or turn around quickly with a knife in

your hand.
