Production of lactose-free milk
•Lactose is a type of sugar found in milk and diary products .
•Many people lose the ability to produce lactase as they get older and suffer from lactose intolerance, a digestive problem where the body does not produce enough of the enzyme lactase. Symptoms include nausea, flatulence and diarrhea as their digestive system is upset by the lactose.
•
•Milk can be made lactose free by adding the enzyme lactase to it and leaving it to stand for a while to allow the enzyme to break down the lactose.

activity
produce a model of a fermenter using a used toilet roll and various items of rubbish, which you then label.
In the model, ensure that you illustrate how the conditions in the fermenter are controlled, limited to: temperature, pH, oxygen, nutrient supply and waste products, in order to maximise the production of substances such as insulin, penicillin and mycoprotein.
