In the video you watched, we stopped when the temperature reached 17 degrees Celsius, which is a bit below room temperature. If we had let heat continue to flow into the water, the temperature would continue to increase. But would it keep increasing temperature forever?
Imagine I had transferred the water into a small pot and left it on the hot stove for 30 minutes. What would happen to the water eventually? Discuss with your neighbor.

While the ice was melting, it was changing phase between solid and liquid. While watching the video, you answered some questions about what the particles were doing during this time, and what they weren't doing.

So then, while a substance is changing its state of matter, its particles do not change how much kinetic energy they have. They only change how they are spaced.
What happens to particles during phase changes?

We should expect, then, that the temperature will increase once all the ice is melted, but then stop increasing while boiling occurs.
What would this look like on a graph?

Notice that I changed the x-axis since the last time you looked at this graph. Now, it says "heat transferred to cup."
If heat is transferring into the cup the whole time, this means that the water must be gaining energy the entire time, right?
And yet, the temperature of the water doesn't change for big portions of the graph. This suggests that even thought the particles ARE gaining energy, they are NOT gaining kinetic energy.
Take your time on this slide. Reread it if you need to.

Let's call the energy gained by the water "phase energy."
The water is using the energy it gains to change the phase of matter its in.
So, depending on what region of the graph we're in, the water is either gaining Kinetic Energy or its gaining Phase Energy, but never both at the same time.
