VOICED : Sabor amazonico en la alta cocina peruana

Chef Pedro Miguel Schiaffino returned to Peru after working in New York and Italy to transform local cuisine. Initially undervalued, Peruvian cuisine gained prestige as Schiaffino incorporated Amazonian ingredients into high-end dishes at his restaurant, Amas. He explored indigenous cooking methods to create a diverse menu featuring unique dishes like patarasca and profiteroles. Amas, located in Miraflores, quickly gained recognition, ranking 47th among Latin America's top 50 restaurants. Schiaffino also owns Malabar, which ranks 30th.
