Banana and honey ice cream
Homemade banana ice cream is an instantly gratifying snack. Healthy and ice cream don’t usually go together in the same sentence, but in this case they do!
3 Bananas, large, ripe, peeled and sliced (Main)
¼ cup Thick greek yoghurt
1 tsp Vanilla essence
2 Tbsp Runny honey
Directions:
Place bananas in a dish lined with baking paper and freeze overnight or at least 8 hours until frozen hard.
Thaw bananas for 5 minutes (this will make it easier to blitz) and place in food processor with yoghurt, vanilla and honey. Process until smooth and the consistency of ice cream.
Serve immediately or return to freezer until ready to serve.

June Festival
The Festas Juninas, celebrated in Brazil since the 17th century, are the second biggest national celebration, behind Carnival. Originating in pagan cults, the festival incorporated influences from Catholicism, associating itself with saints such as St. Anthony, St. John and St. Peter. Brought to Brazil by the Portuguese, the celebrations merged with elements of the Sertanejo, African and indigenous culture, which is reflected in the typical food (with corn as the main ingredient), dances and decorations.
The north-east region stands out in its appreciation of these festivities, with Campina Grande, in Paraíba, hosting one of the biggest celebrations in the country, with bonfires, fireworks, quadrilha competitions and stalls. As well as being decorated with banners and balloons, this festival is marked by games such as pau-de-sebo and casamento caipira, and by some superstitions. Curiously, June celebrations are not limited to Brazil, but are also observed in several other countries.
