Gudeg

Gudeg is a special food from Yogyakarta's Special Region that is made from young jackfruit cooked with coconut milk and a high number of specific spices and seasonings used in the boiling process. Gudeg color is primarily determined by the spices used. Because the meat of young jackfruit has no distinct flavor, these spices give the predominant flavor of gudeg. Gudeg is available in a range of colors, starting from almost white or light beige to dark red or brown.

This product's color differences have created nicknames for the two types of gudeg, white gudeg and red gudeg. The white gudeg variation is made with spices that do not significantly alter the color of the original product: lumbang, coriander, galangal, ginger, shallot, garlic, and black pepper. Other spices and seasonings are added to red gudeg in addition to the preceding ingredients, given the result jackfruit porridge a deeper color. The red color is often taken from teak and Moringa oleifera leaves, which are combined with shrimp paste to produce a red-brown tint. Furthermore, in modern Indonesia, teabags are occasionally added to meals during the boiling process to give gudeg a deeper color and a more powerful sour flavor. After the food has been cooked, the tea is removed. Palm sugar is commonly used as a sweetener in all forms of gudeg, including dry and wet gudeg, as well as red and white gudeg. This sweet flavor is characteristic of gudeg.

Gudeg can be canned or packed in a besek (bamboo box) or kendil (clay jar). Although frozen gudeg can last up to a year, it does not taste as wonderful as freshly cooked gudeg. Gudeg comes in numerous varieties, including dry, wet, Yogyakarta style, Solo style, and East Java style. The dry gudeg has only a small amount of coconut milk and a small amount of gravy. Wet gudeg is made with additional coconut milk. The most popular gudeg is from Yogyakarta and is often sweeter, drier, and red in color due to the use of teak leaves as a color agent. Gudeg solo from Surakarta is more watery and gravy, with a lot of coconut milk and a pale tint since teak leaves are not usually used.
