what are they?
They are adjectives that can become stronger or weaker if you use words like "very" before them because these adjectives are not extreme.
For example: Carla's car is quite big, isn't it?
"Completely" or "Absolutely" can't be used with gradable adjectives.

NON-gradable adjectives
what are they?
They are adjectives that can't become stronger or weaker by using words like "very" because they are extreme.
For example: I'm absolutely freezing.
"completely", "absolutely", "Totally" and "really" can be used with non-gradable adjectives.
