Collage can be defined as...
cut-out pieces of paper, fabric, photos arranged and stuck down onto a surface

Artists mainly used paper cut outs for collaging to begin with

later in his life, at the end of his career in the late 1940s, Matisse would use this technique to create some of his most famous works by painting paper and cutting them out and arranging them on walls- today we know this as collaging
The Cut-Outs period
without knowing, Matisse used cut-out paper and pasting as early as 1919 to design larger paintings he made. It was a way to "map out" his ideas and the space

Matisse made many cut-out works on small scale, then grew to create HUGE wall designs in 3 different studios in France.
Using Space
He loved using mostly organic shapes as they could replicate human figures and nature. Some of his works did include some geometric like shapes as well.
Organic Shapes
He used vibrant, rich bright colors for his cut-outs; he chose the colors and painted the paper himself. At a time when his health was deteriorating, he wanted his colors to make him feel happy and alive.

What we see in modern art museums today, we can thank Matisse for. Installation art = works of art that are pieced together and setup in the exhibition space just as the artist had it setup in their studio
Installation Art
Before this, what you would see in museums were canvas paintings framed and hung on the walls. So seeing Matisse's cut-out works were fresh, startling and new for viewers
Traditional vs. modern

Pop art, art based on popular culture items, people and places used collage to make statements about things and ideas that were popular at the time
Pop Art collaging (1950-1970)
artists would cut out images and text from newspapers and create different imagery. Some even using one-point perspective
