History
The Mughal dynasty (1526–1858) was among the
richest and longest ruling in India, and at its peak
controlled large portions of the Indian
subcontinent. The Mughals were Muslims of
Central Asian origin, and Persian was their court
language. (Persia = Ancient Iran)

tandoor, which is a grill made using
charcoal and fire.
-Used to make lots of famous dishes, such as Afghani chicken tikka, tandoori chicken, and naan

masala chai means ‘tea with spices.’ It’s typically made
with black tea; a variety of spices, such as cinnamon,
cardamom pods, ginger, cloves and star anise;
sweetener, such as jaggery (unrefined cane sugar) or
honey; milk (most often whole milk); and water.
