Ingredients

  • 2.5 cups dry elbow macaroni noodles

  • 3 tablespoons butter

  • 2 tablespoons whole wheat flour

  • 1/3 cup heavy cream

  • 1/3 cup 2% milk

  • 2 cups sharp cheddar cheese, freshly grated

  • 1/4 teaspoon sea salt

  • 1 x 8oz bag of croutons

  • Cook macaroni noodles according to package instructions, drain, and set aside

    Next step is called making a "Roux" if you try to put flour or corn starch into a thin liquid it will clump.

  • In the same pot you cooked the noodles in, melt butter (make sure heat is on low)

  • Add flour and whisk quickly to combine with flour, making sure not to burn (remove from heat if necessary)

  • Add heavy cream and milk and whisk mixture on medium heat until it starts to thicken. these are similar steps to making gravy you want your cheese sauce to come out like a thick cheese gravy.

  • Once mixture starts to thicken, add cheese and salt and stir until cheese melts.

  • Add noodles in and stir well, remove from heat

  • Technically you are done and can serve it, lots of people like to put a little flourish on it, add some paprika to the top, some people like fresh cracked black peppercorn, Myself i prefer to top it with italian croutons and bake it just long enough to toast up the croutons.
