How did William Blake use stanzas in "The Echoing Green"

There are two stanzas. He broke up the stanzas based on the different sounds of birds. The first stanza talks about how the blue jay sings so sweetly. The second stanza shows how the owl hoots at night.

He helps show this by using sound words like "the merry bells ring" (line 4) and "does laugh away care" (line 12). The third stanza has a quieter tone with no sound words. This is done intentionally to show that the day is ending.

There are three stanzas. He broke up the stanzas based on each color of the birds--the blue bird in the first stanza, Old John and the red bird in the second stanza, and the yellow canary in the third.
