The French term, “mise en place” literally means

A very fine cut suitable for many vegetables and herbs

It  is a technique of cutting into very thin strips, much finer than shredding. Remove stems from leaves and stack a few individual leaves together. Roll tightly into a cylinder and slice into fine shreds. A leafy greens such as spinach, mint or basil is often prepared in this way to garnish dishes.
