Habilidades são coisas que você sabe fazer

Nesses casos, can indica aquilo que você sabe fazer e can't aquilo que você não sabe fazer.

Herbert sabe falar cinco línguas.

Portanto, é uma habilidade de Herbert.

Eu não sei dançar.

Isso indica que é algo que eu não consigo fazer por não ter capacidades motoras ou conhecimento.

Contudo é possível dizer com esta construção

I know how to dance.

(Eu sei como dançar.)
