What is Adobo?

Adobo is a Spanish word. It is a sauce that meat is soaked in before cooking. 

Adobo does not come from Spain though. It comes from the Spanish 

invading the Philippines in the 16th Century. The Spanish saw how Filipinos 

cooked their meat. They liked the style. They called it adobo. It is still popular.

Ingredients

Vinegar and salt are the main ingredients in adobo. These stop the meat

from going bad. Adobo recipes also include soy sauce and spices. 

Meat is soaked in this mixture for at least an hour. It gets a stronger flavor 

if you keep it in for longer. Adobo meats are served over rice to soak up 

the sauce.


Adobo was first made to stop meat from going bad in the heat. Most 

animals were killed during the cold months. People still needed the meat

 throughout the year. Adding salt and soy sauce made it hard for bacteria 

to grow. This kept the meat safe for longer.

Types of Adobo

The earliest adobo is from the Philippines. It is a form of traditional cooking 

there. The original ingredients of adobo were vinegar and salt. This changed 

after trading with the Chinese. Then the salt was replaced with soy sauce.

Many adobo recipes come in liquid form. Others are dry rubs with 

of a mix of flavorful spices.


Adobo can also be found in Latin American countries. Puerto Rican adobo 

is a seasoning salt. It is made of herbs and spices that are rubbed onto 

the meat. Adobo is popular in Peru as well. Pork and spices are stewed in 

a clay pot. They are then served with bread for dipping in the sauce.
