Ingredients:
1 tbs margarine, dialy free
1 tbs vegetable oil
1 cup onion – chopped
8 oz mushroom – sliced
1 large garlic clove – minced
cup celery – thinly sliced
cup bell pepper, green – sliced
3 cup soybean milk
4 cups potatoes – cube inch
tps black pepper
1 tps salt, or to taste
1 tbs parsley – chopped
Directon :
1. Saute onion, garlic, celery, and green pepper in hot oil and margarine about 3 minutes. Add sliced mushrooms and saute 3 more minutes.
2. Add soybean milk, back pepper, salt and potatoes. Bring mixture almost to a boil; reduce heat and simmer 25 minutes, string occasionally
3. Make amout 6 cup. Thin with extra soybean milk if soup is too thick
4. Garnish with parsley and serve with the meal
