How to 'salt to taste.'

Think about what we have done so far in the class, what are your current thoughts on using salt?

What do you remember about what we have done with pasta and cookies?

Should we try to measure how much salt we are using?

• Yes , because it is more accurate.

• Using a 'pinch' or small amount is okay

When we place the salt into the dish why should we have our hand high-up from the dish?

• It is good exercise

• To help distribute the salt over the food.

• It doesn't make a difference as the salt will still be on the food.

Does salt make the food ( ingredients ) taste more salty or does it ' elevate ' the ingredients ( make them taste better ? ) .

The Chef advises us to ' taste lots of different foods." He states that this helps us to understand how things taste differently.

If you are cooking for more than one person and you know how much salt-to-taste each person likes, what is the advice that they give you?

It is better to add TOO little salt at first because it can be hard to change the taste if you OVER salt.

If I over salted my food I would:

• Make the SAME dish with NO salt & mix the two dishes together

• Add more ingredients to the dish that are not salty.

• Accept that I made a mistake, learn from it & re-make the whole dish from the start

• Order take-out !
